Gluten Free Confetti Rice and ChickenI’m always on the lookout for new gluten free items at Trader Joe’s for Shani, but unfortunately, a lot of the newer gluten free items are Indian flavors which poses a problem, as the flavors and spices used in Indian cooking don’t work well with her taste buds.  (Could she make my cooking life any more difficult, sheesh!)  There are also a ton of items that would be gluten free except they use regular soy sauce rather than the wheat free tamari sauce (the more traditional soy sauce, by the way).

On one of my recent trips I saw the new Trader Joe’s Confetti Rice.  It’s got lemon grass, baby corn and ginger.  The box contains 2 pouches, and you just pop a pouch into the microwave for a couple of  minutes.  I have to say, it’s quite fragrant after cooking!

I defrosted some Just Grilled Chicken Strips and added them and a little tamari to this wonderful rice and lunch was done!  You could also have this as a Quick and Easy Dinner too!

  • Trader Joe’s Confetti Rice
  • Trader Joe’s Just Grilled Chicken Strips
  • Tamari Soy Sauce

    I added Chickenless-Strips for a meatless version! Yum. The rice is so fragrant and full of flavor I found it didn’t need any seasoning with the strips.

      Thanks for the comment! I’ve never tried the Chickenless – Strips – are they gluten free as well? We’ll have to try them out in a few of our recipes as we are always looking for new things to sample. It would be a fantastic way to make a lot of our recipes vegetarian – just switch out the meat with the chickenless strips and change the chicken stock to veggie stock and you are set. Thanks again for the great idea!

    Todd checked out the Chickenless Strips this week at Trader Joe’s and at least the version that he found had wheat in them. Is there perhaps another version that is on offer at some of the other Trader Joe’s that is gluten free? Please let us know if there is as we would love to add them to our recipes.

    Got some from a friend, it’s just so delicious, didn’t need to add any other ingredients. I have been searching for it since them, got to have it.

      Yeah I didn’t see it last time I looked. I’ll have to ask, it may be a ‘seasonal’ item, I hope it’s not discontinued! That would be a shame, it’s so good!

    I love the flavors of the confetti rice, however, because it is frozen and the instructions say to microwave it, I have found it to be too mushy. Is there any way to remedy this? Thanks! Caroline

    I just combined confetti rice with trader joes chicken
    breast medallions with coconut red and curry sauce
    In the frig case. It’s wonderful. The ginger in the rice
    complements the curry sauce and soaks up al the extra sauce.
