I don’t know about you, but brown guacamole just puts me off a bit. I know that a little citrus will help keep it green, but I landed on another idea recently. We usually get the Avocado’s Number guac from Trader Joe’s. It has 2 separate plastic containers, and since there is only the 2 of us, freezing one of them for later makes sense. Using the frozen guacamole is super easy in the morning when I’m making a lunch wrap for work. I use a butter knife and slice off the quantity needed and put the rest back in the freezer, no more brown guacamole!
Here’s the wrap I made for my lunch today. (Don’t call it a burrito, people seem to have a problem with cold burritos. Call it a wrap, no problem!)
- 3 oz. Trader Joe’s Just Grilled Chicken Strips
- Trader Joe’s Brown Rice tortilla (This is gluten-free!)
- Avocado’s Number Guacamole
- Trader Joe’s Simply Fat Free Sour Cream – a new item at TJ’s!
- Trader Joe’s Chunky Salsa
- Trader Giotto’s Quattro Formaggio
- Trader Joe’s Serrano Salsa
Defrost the chicken. For this amount I did 5 minutes, 7 is recommended, but in our microwave that’s too long. I heat the tortilla for about 35 seconds to make it pliable, put on a dollop of sour cream, add the chicken, slice off some frozen guacamole, a little little cheese, a little of both salsas, roll the tortilla and wallah! The Holy Frozen Guacamole Chicken Wrap is done.
By the time I eat it, the guacamole is defrosted, all the flavors have mingled and my tummy gets happy!
