Quick & Easy Midweek Gluten Free Meals

egg timerLet me just start off by saying, I don’t cook.  Well, let me be honest, I can’t cook.   I actually have to pull out a cook book in order to make hard boiled eggs!  The gluten free meal ideas that I want to share are really quick and easy, mostly off the Trader Joe’s shelf, ideas.  I will leave the recipes to Todd!

Here are my very low effort favorites for mid-week eating:

  1. Mango chicken sausage with gluten free pancakes – I have honestly eaten this for breakfast, lunch, and dinner – not usually in the same day of course!  A Toaster oven really takes this meal from just okay to fantastic.  The flavor in both the sausage and the pancakes are really brought out by a little toasting.  I wrap this up in saran wrap for a quick meal on the go or just eat it at home!  It’s as simple as it sounds: throw both the sausage and the pancake in the toaster oven until they brown.  The pancake takes less time so put it in there when the sausage is ¾ complete.  That’s it – wrap the pancake around the sausage and you’re done! (Ingredients: Trader Joe’s Mango Chicken Sausage, Trader Joe’s Gluten & Dairy Free Homestyle Pancakes (frozen))
  2. Baked potato with Shredded BBQ Chicken – I panicked when I found out that most BBQ sauces have wheat containing soy sauce as one of their ingredients.  How could I live without BBQ sauce!  Fortunately the Shredded BBQ Chicken at Trader Joe’s does not have wheat as an ingredient.   Cook the potato in the microwave for about 8-10 minutes or until you can easily poke a fork in it, then heat up the BBQ chicken in the microwave.  That’s it!  You can add a dollop of sour cream and chopped green onions if you’re feeling really creative.   (Ingredients: Baked Potato, Trader Joe’s BBQ Shredded Chicken)
  3. Chicken kabobs and cranberry pecan salad – Again, I use my favorite tool – the toaster oven.  Cook up the kabobs per the directions.  I use Trader Joe’s BBQ sauce on the side for dipping.  It’s one of the few brands out there that doesn’t use soy sauce as an ingredient.  Serve the salad on the side and your set with a well balanced meal.  This salad is fantastic – the cranberries, the pecans, and the cheese just really take this from a so-so salad to amazing.  I could live on this one! (Ingredients: Trader Joe’s Marinated Chipotle Chicken Skewers;  Trader Joe’s Kansas City Style BBQ Sauce;  Trader Joe’s Complete Salad Baby Spinach w/ Cranberries, Candied Pecans, Blue Cheese, and Raspberry Vinaigrette.)
  4. Vegetarian chili and tortilla chips – I was really sad when I realized I couldn’t eat Trader Joe’s Turkey Chili any more due to wheat as an ingredient.  But then I discovered the Vegetarian Chili.  Heat up the chili, shred a little cheddar cheese, or use the Trader Giotti’s Quattro Fromagiio cheese blend.  Add tortilla chips on the side and you are set.   So quick and easy! (Ingredients: Trader Joe’s Organic Vegetarian Chili, Trader Joe’s Baked Blue Corn Tortilla Chips Salted, cheese)
  5. Chicken and brown rice – The tamari (wheat/gluten-free) soy sauce is what makes this dish.  Unfortunately, Trader Joe’s doesn’t sell wheat free soy sauce, but I have linked to our favorite brand – San-J– that you can buy on-line.  This recipe is so easy – heat up the chicken, heat up the rice, then add the soy sauce!  I prefer the brown rice in the bowl because it’s much easier to add your chicken and tamari to it rather than having to provide your own bowl – yes, I’m very lazy!  (Ingredients: Trader Joe’s Frozen Just Grilled Chicken Strips, Trader Joe’s Fully Cooked Organic Brown Rice Bowl, San-J Tamari Gluten-Free Soy Sauce)

    Your cranberry pecan salad sounds great. It follows my salad rule: lettuce plus a fruit, a nut and a cheese.

      That’s a great salad rule! A yummy dressing is a must too – one of my favs from TJs is the Champagne Pear Vinaigrette! Prob not good on the cranberry pecan salad, but great with quattro frommagio and pepitas. Does the pear in the vinaigrette count as fruit!? :o)
