Quick Gluten Free BBQ Chicken Pizza

 

Before we realized that Shani needed to live a gluten free life, one of our regular dates on date night was pizza and beer. Really, who doesn’t love pizza (and beer!)?  We might have noticed that by the time we walked home, she was almost in a coma, but we didn’t put 2 and 2 together for a couple of years!  Once we did put 2 and 2 together, the quest was on to find a way to make pizza at home, gluten free.  We’ve tried a ton of the mixes on the market, and most end up with a really hard crust that’s just ok.

So the other day I was browsing around the internet and came across this recipe at Momfluential for a simple 3 ingredient cheese pizza using gluten free rice tortillas for a crust.  I was intrigued to say the least.  Accepting that this was going to be a super thin crust, I set out to make Shani’s favorite, BBQ chicken pizza.

Ingredients used:

  • Trader Joe’s Brown Rice TortillasQuick Gluten Free BBQ Chicken Pizza
  • Trader Joe’s TJ’s Bold & Smoky  Kansas City Style Barbecue Sauce
  • Trader Joe’s Just Grilled Chicken Strips
  • Chopped red onion
  • Chopped crimini mushrooms
  • Chopped green onions
  • Chopped cilantro
  • Trader Joe’s Quattro Formaggio
  • Johnny’s seasoning salt

I’m going to leave the portions up to you on this one.  I will say that I make each of us our own pizza from one tortilla each.  You could also do a ‘stuffed crust’ with two tortillas that might be interesting!  There are a few other things that I do when I’m making this pizza.  The first is to saute the onion and mushrooms and season them with some Johnny’s (of course).  The second thing that I like to do is to dice the chicken and put it in a bowl and toss it with bbq sauce.  This gets all the pieces coated in bbq sauce, which I prefer.

Tips

I have found that toasting the tortilla first in the toaster oven works really well.  Pull it out when it’s mostly crisp, spread the bbq sauce on the tortilla,  cover with the sauteed veggies and chicken and sprinkle with the cheese and pop it back into the toaster oven long enough to melt the cheese.   Careful though, these things burn really quickly!  I like to top it off with some diced green onion and cilantro.  Yum!

This received rave reviews from Shani.  She actually said this is one of her new favorites!  Success!  Another fantastic plus, is that this is so quick and easy.  It’s a great weeknight treat.

 

Thick crust?

While this makes a fantastic and quick thin crust gluten free pizza, I’ve yet to find a way to make a nice deep dish pizza gluten free, so I’m open to suggestions! Anyone?
