Gluten Free Dairy Free Banana Ice Cream

Back in high school I worked at a local Baskin-Robbins scooping up the 31 flavors and creating sundaes and banana splits by the hundreds. The summer was fun, with lines out the door, especially long on Memorial Day and the 4th of July.  The policy at our shop was that each shift you could eat 2 scoops.  Sounds awesome, right? Wrong.  I didn’t get fat, I had a teenager metabolism, but I did get so sick and tired of the smell of ice cream, I can hardly eat the stuff to this day!  I realize that most people won’t get this, but when you’re around the stuff 8 hours a day, in its varying states of frozen-ness, trust me, you start to notice the smell.  I don’t like even going in an ice cream shop, and now I’m lactose intolerant anyway. A few bites is all I can handle!

So when I saw this a few months back my curiosity was peaked.  Dairy-free “ice cream”? I may have seen it at or maybe at The Craving Chronicals, I’m not sure which, but they were definitely my inspiration to try this dessert.  It’s not that I crave ice cream (nor have I since that fateful summer at 31 flavors!) and I’m not really a huge fan of bananas either, but this seemed so simple and really, unbelievable that I had to have a go.

Ingredients Used:

  • 2 bananas cubed and frozenGluten Free Dairy Free Banana Ice Cream
  • 1 tbsp. Trader Joe’s Organic Raw Blue Agave Sweetener
  • 1 tbsp. Trader Joe’s Almond Butter (Creamy with Sea Salt)

Really, that’s it?

Yep, that’s it! The Agave and Almond Butter are optional as well.  Make sure you cut up the bananas before you freeze them.  Toss them into a food processor and puree until you get a silky soft serve style “ice cream”.  I added the agave and Almond butter just for fun.  The result is a healthy, gluten and dairy free frozen treat.  I was amazed, honestly, that this works and the taste is quite good.  What a fantastic way to satisfy your sweet tooth and get a serving of fruit all in one bowl!
