BBQ Chicken and Baked Potato

Baked Potato

This is another one of those super easy and fast recipes that I thought I should share.  I don’t recall where I first saw this, and to be honest, most of the time when I suggest it to the uninitiated I get a somewhat quizzical look in response!  But here’s the thing, this dish never fails to exceed expectations.  Maybe people just don’t know what to expect.  All these flavors end up balancing really well, for a very satisfying and comforting meal.

Ingredients used:

  • 1 baked potato (1/2 per person)
  • Trader Joe’s Smokehouse BBQ Pulled Chicken Breast
  • Trader Joe’s Greek Style Plain Yogurt (or sour cream, I use what we have on hand. This style of yogurt is very similar to sour cream)
  • Cheese (I usually use Quattro Formagio but I had Fancy Mexican Blend on hand and used that)
  • Pan seared green onion (or diced and raw, I mix it up, both are good)

There are a couple of really nice things about this meal.  It’s super easy, which is great and the chicken is packed with protein and almost no fat, Baked Potato & BBQ Chickenalso as bonus and you could use a no fat sour cream and skip the cheese if you are really limiting your fat intake.

I microwave the potato (puncture with a fork in a few places first) for about 10 minutes. If you are using seared green onions, do that wile the potatoes cook.  Otherwise, dice your onions.  Once the potatoes are cooked, cut lengthwise and fluff a little bit.  Then microwave the chicken for 2 minutes per the instructions. Stir and then 30 seconds more.  Top the potato with a decent serving of bbq chicken, yogurt or sour cream, cheese and green onion. Pretty damn easy!

      Hi Julie!
      Another yummy way to use the BBQ chicken is in an Udi’s gluten free hot dog bun or roll. Toast up the bun (or not if you don’t want to heat up the house!), add a little mayo, the BBQ chicken, and top with a little cheese – yum!

    I have just discovered the joys of a baked pototoe. I can’t wait to try this. It looks so yummy and a great idea for a work lunch. Sometimes I want something besides a salad.
