Trader Joe’s Chicken Tortilla Soup

This is a first for me.  Both of the TJ’s that I frequent have at least one area for food samples (and at the Newport shop there is a wine bar! I know you’re jealous…cheese too!)  So one of the TJ’s samples I had recently was some Chicken Tortilla Soup.  I thought it was a damn fine soup, and as there was a recipe card available I took it.   Also, we’re headed into the Winter of Soups in my house, so there was added incentive to find another good soup to add to the rotation.  There were two changes I made, rather than using the Salsa Autentica I used the fresh mild salsa and instead of the canned chicken I used Just Grilled Chicken strips  (oh I also skipped the cumin as Shani doesn’t like it).  Feel free to alter at your discretion.

Ingredients used:

  • 1 Box Trader Joe’s Chicken Broth (Look for the gluten free)
  • 1 Jar Trader Joe’s Salsa Autentica (I used fresh mild salsa)
  • 1 Can Trader Joe’s White Chicken – drained (I used defrosted Just Grilled Chicken Strips)
  • 1 Can Trader Joe’s Black Beans – drained
  • 1/2 Package Trader Joe’s Frozen Roasted Corn
  • 1/2 Teaspoon Trader Joe’s Cumin
  • 3 Trader Joe’s Corn Tortillas cut in strips (I used the handmade as they are far superior to the others)
  • Trader Joe’s Shredded Mexican Blend Cheese
  • Trader Joe’s Cilantro chopped
  • Trader Joe’s Tortilla Chips – crushed (I used the Restaurant Style White Corn, again, I think these are the best)

Per the recipe card:

Mix first 7 ingredients together in pan. (Here I opted for my Staub French Oven) Bring to boil, reduce heat and then let simmer until corn tortillas are dissolved – approximately 20 minutes.

Top with shredded cheese, cilantro and chips.



We did enjoy this quite a bit and will be making it during the Winter of Soups.
