California Omelette

Ingredients

I’ve been making this little omelette for myself all week and thought I would share!  I opted for a no cheese version as I’m trying to be good with the start of the new year and all.  And honestly, I don’t miss it one bit.  This is a very smooth tasting omelette, if that makes sense?

Ingredients Used:

  • 1 egg
  • 3 tbsp. Quick Whites 100% Liquid Egg Whites
  • 1 tsp Trader Joe’s Greek Style Plain Yogurt
  • 1/3 tsp Trader Joe’s Organic Virgin Coconut Oil
  • Trader Joe’s Chunky Salsa to taste
  • Trader Joe’s Everyday  Seasoning
  • 1/2 Avacado, sliced

Heat the oil in a pan over medium high heat.  I have a small All Clad non stick that I use and it seems to be the right size for omelette making. California Omelette While the oil heats, whisk the egg, egg whites and yogurt together in a small bowl.  Grind some of the Everyday seasoning and the South African Smoke into the whisked eggs and whisk a little more.

Once the oil is heated, pour the eggs into the pan and pull the eggs into the center, allowing the less cooked eggs to expand around the edges until you have a nice round egg to flip.  Once I flip the eggs, I only let it sit for a few moments before I pour some salsa into the  middle and tunr the egg back on its self creating the classic omelette shape.  Top with more salsa and the sliced avocado and enjoy!

This is the first time I’ve used coconut oil in my cooking and I loved it.  It added a really nice smooth texture to the eggs.  Apparently, there are a ton of uses for this wonderful oil, check out Crunchy Betty’s site for some other non-cooking options!
