Hard Shell Turkey Tacos

I’m a huge fan of the humble taco in all of it’s forms.  From street taco to gourmet food truck taco, hard shell or soft, steak, chicken or pork, I enjoy them all (turkey in this case).  Shani, however, doesn’t have the same luxury in eating that I do. In addition to being gluten free and cow free, Shani is also pretty sensitive to spicy foods, so that adds a whole other set of restrictions to how I cook.  Once I made the mistake of using the TJ’s taco mix packet and let’s just say there were a lot of leftovers for me!

So here we have my  Shani approved hard shell turkey tacos.  We like ours with sour cream Turkey Tacosand guacamole, usually the pre-made Avocados Number from Trader Joe’s for the guac and the fat free sour cream as we’re always watching our waist lines.

Ingredients Used:

  • 1 package Trader Joe’s Ground Turkey Breast 99%Fat Free (usually just over a pound)
  • 2/3 a jar of Trader Jose’s Chunky Salsa
  • 2 tbsp. olive oil
  • Trader Joe’s Corn Taco Shells
  • Trader Joe’s Avocados Number guacamole
  • Trader Joe’s Fat Free Sour Cream
  • Trader Joe’s 5 Cheese Mexican Blend
  • Lettuce

IAll Clad Skillet like my high walled All Clad skillet for this.  Over medium high heat brown the ground turkey in the olive oil and add the salsa to your desired taste.  For me, it’s somewhere between 1/2 and 2/3 of the jar.  Turn the heat down and simmer while you toast the taco shells.  Toasting them brings out a lot more flavor, so while it’s not technically required, do it anyway, you won’t regret it.

That’s it! Scoop some of the turkey into a shell and top with your favorite taco condiments.  As you can see, we used sour cream, guacamole, cheese and lettuce.
