Easy Southwestern Style Chicken Soup

Southwestern Chicken Soup

Somewhere on the internet I stumbled onto this recipe, and if I can ever find that site again, I’ll edit this and add a link giving credit where credit is due!  The version that I have here is somewhat modified in that the original called for using rotisserie chicken breast and I used Just Grilled Chicken Strips.  Shani has had a problem with rotisserie chicken making her ill in the past so we avoid that (like many, many, many other things ;)).

Ingredients Used:

  • Trader Joe’s Extra Virgin Italian Olive Oil Spray
  • 1 cup chopped red onion
  • 1 tsp. Trader Joe’s Crushed Garlic
  • 1 container Trader Joe’s Organic Low Sodium Chicken Broth
  • 1 pint water
  • 1/4 cup uncooked white rice
  • 1 can white beans, rinsed and drained
  • 3 cups defrosted and chopped Just Grilled Chicken Strips (bite sized pieces)
  • 1/2 cup coarsely chopped fresh cilantro
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 cup chopped tomato
  • 1 diced and peeled avocado
  • 1 tablespoon fresh lime juice
  • lime wedges

I really like my Staub French Oven for making soups! It’s really the perfect pot for this sort of thing. Heat your favorite soup making pot overSouthwestern Soup Cooking medium-high heat and spray it with the Olive Oil Spray. Saute the onion first for a few minutes and then add the garlic.  The crushed garlic cooks quickly, so take note of that!  Next add the chicken broth, water, rice and beans. You want to bring this to a boil and then reduce the heat to a simmer for 15 minutes.  Stir in the chopped Just Grilled Chicken Strips, cilantro, salt and pepper and simmer 5 more minutes.

Remove your favorite soup making pot from the heat and stir in the diced tomato, diced avocado, and lime juice. Serve with lime wedges.  Enjoy!
