Here’s an easy and tasty take on fish tacos for those of us who don’t really love most fish.  Langostinos are kind of like really small lobsters and Trader’s has them in the frozen section all of the time.  This goes together quickly and the slaw really makes it awesome!

  • 3/4  bag defrosted TJ’s langostino tails
  • 1/2 cup TJ’s Salsa Especial Mild
  • 1 tablespoon TJ’s Fat Free Sour Cream
  • 1/4 cup white wine
  • 1 tablespoon butter

Cabbage Slaw

  • 1/3 head green cabbage, shredded
  • 1/4 cup TJ’s Reduced Fat Mayonnaise
  • 1 tablespoons Fat Free Sour Cream
  • 2 tablespoons diced red onion
  • 1 teaspoon Blue Agave Sweetener
  • 1 tablespoons apple cider vinegar
  • 1 teaspoon Aioli Garlic Mustard Sauce

Corn Tortillas

Chips and Guacamole to taste

IMG_2834For the langostino tails, heat the butter over medium high heat and add the salsa and wine.  Let it cook down a bit and then throw the tails in to heat them up.  They are already cooked, so just heating them up is the goal.

Mix up all the ingredients for the slaw in a bowl and set aside.

When the langostinos are heated, add sour cream, mix and remove from the heat.

I like to heat my corn tortillas in a pan with a little bit of butter and then fill with the tails and slaw.  Squirt some lime juice on the whole thing.  Add guac and hot sauce to taste.  Enjoy!
